WINNER of this week’s £20 Powters voucher is Gillian Brown, of Vicarage Close, Swaffham Bulbeck, with her recipe for sticky toffee pudding.

Mrs Brown said: “I gave this recipe to my daughter, who lives in Perth, Western Australia.

“She always uses it when she has friends for an evening meal and a regular visitor says he would marry her for her sticky toffee pud. She is already married with four children, I might add.”

STICKY TOFFEE PUDDING

INGREDIENTS - Pudding

5oz caster sugar

3oz butter, creamed

2 beaten eggs – add a little at a time

6oz self-raising flour

6oz chopped dates

6 fl oz hot water

¾ teaspoon bicarbonate of soda

½ teaspoon vanilla essence

2 teaspoons sweetened coffee

INGREDIENTS - Topping

4oz butter, melted

6oz brown sugar

¼ pint double cream

METHOD

Mix all the ingredients and cook in a medium oven for 25 minutes.

Mix the topping together and grill until bubbly.

Serve with chilled cream.
