THE winner of this week’s favourite recipe competition is Yvonne Clarke, of Hill Close, Newmarket, for her macaroni with sausage meat and carrots.

“I have an 88-year-old father and a 94-year-old father-in-law,” said Yvonne, “and this is a good dish to take to them because it can be kept in the fridge for a couple of days, heated in the microwave and still taste good.”

The recipe feature is sponsored by Newmarket butchers, Powters, which provides a £20 voucher each week to spend in its Wellington Street shop to the reader whose favourite family recipe appears in the Journal.

They should be tried and tested family recipes that use basic, reasonably priced ingredients and they don’t have to be meat dishes. Recipes for cakes, puddings and preserves are also welcome.

Macaroni with sausage meat and carrots (serves 4)

8ozs good pork sausage meat or sausages of your choice of flavour

1 tablespoon oil

Half a medium onion chopped

3 medium sized carrots, grated

14oz can of tomatoes, pureed

4 fluid ozs chicken stock, home made or use half a stock cube

1 bay leaf

1 teaspoon oregano

12ozs macaroni or rigatoni

3ozs parmesan or cheddar cheese

Salt and pepper

METHOD

If using sausages, remove meat from skins. Heat the oil and cook the onion until translucent. Add the sausage meat and brown, breaking it up with a fork. Add the carrots and stir for a few minutes before adding the tomatoes, stock, bay lead and oregano. Cook over low heat for 30 minutes and season.

Cook and drain the pasta and mix with the sauce, reheating if necessary. Serve the cheese separately. This dish can be topped with mashed potato.
