The winner of this week’s favourite family recipe competition is Freda Cornwell, of Pound Lane, Isleham, for her apple muffins.

She said: “These buns are lovely for a quick snack.”

The recipe feature is sponsored by Newmarket butchers Powters who provide each weekly winner with a £20 voucher to spend in their Wellington Street shop.

The competition has been running for a year now and shop owner Grant Powter said he had been delighted with the quality of the recipes submitted so far.

He added: “The competition has been a great way of getting people to return to the shop. It’s a very positive way of encouraging new visitors and to reward existing customers.

“It’s been so interesting seeing the different varieties of recipes. The revival of cooking is something that’s pretty much across the board and we wanted to encourage people to get back in their kitchens and to cook healthy and nutricious meals from scratch.

“We also wanted to celebrate the heritage and quality of locally sourced and seasonal British food.”

Recipes should be tried and tested family recipes that use basic, reasonably-priced ingredients. They don’t just have to be meat dishes - cakes, puddings and preserves are also welcome.

Apple Muffins

Ingredients to make about 12:

2 cups plain flour

4 teaspoons baking powder

¼ cup of sugar

1 green apple

1 egg

1 cup milk

1 teaspoon lemon rind, grated

60 grams butter, melted

Method:

Sift flour and baking powder into a bowl and then add the sugar.

Peel, then grate the apple; stir it into the bowl.

Mix egg, milk, lemon rind and melted butter together.

Add to bowl all at once and stir with a fork until just mixed (it is supposed to look ‘lumpy’).

Turn oven to 220 C; grease a 12 muffin pan and almost fill the pans with the batter.

Bake for 15 to 20 minutes or until golden.

Serve warm with butter and jam if you like.
